First time I’ve seen yeast on a store shelf since April.
I’m not sure what’s weirder: its prolonged absence or the fact that I’ve been tracking it.

We’ve had plenty here, but until recently only in the single use packets (or three packs of such) . The jars only showed up a couple weeks ago (I bought one).

Try bulk stores. I think it’s Canadian but we have The Bulk Barn, we got ours there for a song and we still have tons. I panic bought a ton of pizza yeast too thinking it could be used for donuts.
It can’t, but homemade pizza is easy and good

Mrs. Only TwoWheels grabbed every packet she could in March, about a dozen. No jars were to be found. She has ordered compressed yeast on the wally web and is not a fan of it, for whatever reasons I am not qualified to answer.

A lot of people baking when they were at home with restaurants closed (and not wanting to visit grocery stores as often .) While we’ve had yeast, yesterday I saw bread flour in stock for the first time since March.

I too was able to find flour and yeast at the commercial supplier one state over. I was also able to buy high gluten flour (14%) which is great for NY style pizza (has a little chew) and bagels .

Mrs. TwoWheelsOnly is a bread lover. She doesn’t know what to do with herself, so she spends far too much time in the kitchen. This morning she is making more sauce from my abundant tomato crop and herbs, nearly 18 quarts now. I have put on 16 pounds during this pandemic, primarily do to massive quantity of food she is preparing. Yesterday she complained the freezer is full and said we need another one....

She’s been complaining the electric bill is high this year, again, due to pandemic and being home all day, all the baking and running the a/c too. I told her another freezer will just add to the electric bill..... and she goes off about that. So it’s a fine line, new freezer equals more storage equals higher electric bill. As I write this, she is prepp ing a butternut squash to roast. I picked 7 butternut, plus 4 each acorn, zucchini and summer squa sh this week.
She has spiralized m ost of the zucchini this year and it’s in the freezer. She makes lots of zucchini bread. The zucchini, broccoli and 3 types of beans are the majority of the freezer volume. I’d prefer the zucchini be consumed without being turned into bread, but sh e has been doing this for years and doesn’t want to change. Don’t get me wrong, I like it. I just shouldn’t be eating it.

Yeah, I have an unopened pound from Walmart before I realized I needed other people to bake for because I was too unmotivated to bake just for myself.

People were looking for something to do and baking was that thing. Can’t blame em, I got the bug and started to learn. The issue was simply that yeast production can’t be rushed so demand suddenly outstripped demand and it took until now to catch up

I know. S he has made 5 loaves of zucchini bread this week. I can only eat so much. If my mem ory is correct, she has bought more than 50 pounds of flour since M arch and I brought home 10 pounds. My sisters keep sending her new bread recipes....... they’re all baking!

Not a terrible idea, but I doubt they could work together. Sending texts and emails back and forth is one thing, but sharing a work space seems like a disaster waiting to happen.....

This has had so many weird repercussions. The other week, I was talking to a guy who runs a vintage audio repair business, and he said as soon as the stay-home order ended, he got slammed and has been busier than he’s ever been, 1-2 month backlogs. Everyone at home all the time, deciding to switch on their old record player or receiver, finding problems, and then taking them for repair.

I know you said you’re not qualified to answer what she doesn’t like about it, but it’s got me really curious. I’ve been using that specific yeast for 10+ years, and it’s been utterly dependable. My baking frequency hasn’t increased significantly , as it was pretty frequent & regular to begin with (2-3 loaves/month, pizza dough & bagels at least monthly) . I did find an old brick of it in the back of the pantry a couple months back; the “use by” date was sometime in 2017, but it hasn’t behaved any differently from newer packs.
Freeze dried yeast remains viable for a hell of a lot longer than what the manufacturers would have you believe, as long as you keep it dry & cool . I’ve had the same experience at work (winemaking).

Huh, I don’t think my palate is good enough to tell the difference between different yeasts in baked goods, aside from sourdough or natural levain vs commercially prepared yeast . If we’re talking about beer - ales, specifically - definitely.
If shelf life is in the negative column, maybe she’s used to working with fresh yeast? That’s something I’ve never used in baking.

Any thoughts on this XJ ? It sounds good to me, but I’m easily fooled since my practical experience with Jeep upgrades is still pretty minimal.

In truth, I don’t know I could tell any difference either, but the bread lover must have a very discriminating palate.
Heck, last week she made a lasagna. She didn’t like it. She has made many, many lasagnas. I didn’t notice any difference from any other lasagna she has made. I had lasagna for days, because she wouldn’t eat it and I refuse to let her throw out good food.
